Speaking of dark fantasy, I agree with bruce779 that a Del Toro "Berserk" would be awesome, but to tell the Berserk story right, it would have to be a multiple installation from the get go (I'd say a trilogy culminating to the Shoku), which would be extremely hard to pull of with such little known material.
